Vegan Tacos with Quinoa & Basmati “Taco Meat”

Can I get a quick “Hell YASSS” for tacos please?!  I mean soft shell, hard shell, or in a bowl you can’y go wrong in my book.  With endless cravings rushing to the forefront of my brain, I decided it was time to make me some vegan tacos.  I’ve seen them made so many different ways, but I was really happy with the flavor profile and texture.  The earthy, nutty taste of cumin intermingled with the blast of chili powder and tang of lime, nothing short of a home run!

Now don’t get me wrong, there will be naysayers undoubtedly chanting “but it doesn’t taste like taco meat”.  Well duh, it’s not but it’s damn good so who cares!  Once you top it with lots of fresh tomato, avocado, red onion, or whatever you want really, I promise you will feel like your eating a real taco!  Also, about those toppings, you can’t put to much or the wrong thing.  I suggest cilantro…like all the cilantro… or maybe that’s just me.

While making these, a million other ideas flooded into the “I want all the food” section of my brain.  That’s a real thing, don’t let anyone tell you any different.  Seriously though, what about mango salsa instead of regular.  Lettuce wrap instead of taco shells for a healthier option.  I even fantasized about drizzling my vegan cheese sauce all over it, and I won’t lie I probably will.  If your not intrigued yet, you may need to check your pulse.  Pics or it didn’t happen?  Well then, here ya go!

You need these, I need these, humanity as a whole NEEDS THESE!  Try them, fall in love, and then come back and tell me all about it!  I love a good taco celebrations!  As for now, I’m off to siesta, because plant based food comas are pretty real.

Instructions
  1. Combine in a pan basmati rice, quinoa, water, lime juice, and a tsp of olive oil. Bring to boil. Cover pan and simmer for 20 minutes. After let it sit for 5 minutes before opening, then fluff up mixture with a fork
  2. Mix cumin, chili powder, salsa and garlic powder into the basmati/quinoa mixture.
  3. Warm up tortillas or prepare whatever you will use as your taco shell. Chop up toppings of your choice.
  4. Add taco "meat" mixture into the shell, and top with all the deliciousness. Be careful not to devour it all in one bite!

      It’s hard at first, but once you start messing around with spices and herbs and tons of different tastes, it gets so much easier!
