Easy and Delicious Sauteed Balsamic Veggies

Today my loves we are talking EASY.  We are talking DELICIOUS, and we are talking all the veggies.  Seriously, sauteed veggies are my go to meal.  You can’t beat the convenience or the simplicity, plus you can literally throw in ANYTHING.  Everything but the kitchen sink, and then some.  Plus, what smells better than fresh garlic cooking away? I’ll wait, I’ll wait.

I hear a lot from people about the difficulties of eating healthy on a budget, and I totally get that.  I’ve lived my entire adult life on a strict budget and I know what it’s like to reach for the $1 box of Velveta because it’s not payday until Friday.  I promise you though, you can eat clean, healthy, vegan meals on any budget.  A huge part of what I think deters people is the fancy ingredients and “special” products that hold a hefty price tag.  When it comes down to it, you can strip away all of that and still have a crazy healthy meal, for half the cost. Keep it simple!

Confused?  Think about it like this gorgeous. A zucchini, summer squash, red onion, garlic, and green beans cost probably around $5-$6 all together.  Chances are you have some olive oil (or oil of choice) and a box of pasta/bag of rice in your cabinet already.  An entire meal (plus leftovers) for $6.  That doesn’t seem to crazy!  Compare it to an average meal that you would make and see if it’s really a huge difference.  When I did this, I actually realized I was saving money!  It’s all about keeping to the basics, and preparing your own meals.  Mess around with spices, different veggie combos, whatever until you find some staples!

 

             So easy, delicious, and wallet friendly!

I chose to use summer squash, zucchini, red onion, green beans, and garlic in my saute, however you can use any combinations you’re craving!  When it was done, I put it over rice which made for a DELICIOUS meal!  I’ve ate it over pasta before, hot or cold, seriously it’s a winner! The balsamic dressing marries so beautifully with all of the fresh veggies, get your taste buds ready to dance!

Instructions
  1. In a pan, add 1 tbsp of extra virgin olive oil (or oil of choice). Once heated, add in red onion. Saute on medium heat for about 4 minutes.
  2. Add zucchini, summer squash, green beans, and another tbsp of oil into the pan and saute for another 4 minutes, mixing around so that red onions combine instead of burning on the bottom.
  3. Add chopped garlic into the mix, as well as the balsamic vinaigrette and continue to saute for another 2 minutes
  4. When your veggies are tender, remove from heat and serve.
Recipe Notes

Serve this recipe over rice, pasta, or just by itself.  It's so delicious either way.

If you do not follow a vegan diet, a little shredded parm on top would be yummy!  Use salt sparingly to preference!
